How To Make Southern-Style Collard Greens
2 bundles of collard greens (Washed and stems removed)
1 yellow onion cut into thin slices
1 tablespoon olive oil
1 tablespoon of jar minced garlic
1 container of chicken stock
1/2 cup apple cider vinegar
1 tsp red pepper flakes
1 to 2 tablespoon sugar
1 tablespoon of chicken soup base
cajun seasoning
black pepper
onion powder
garlic powder
Hot Sauce
4 pieces of SMO KED neck-bones
1 CURE ham hock (optional)
*Place a LARGE pot on stove top, set to MED-HIGH heat. ADD: olive oil, onions cook until they turn brown.
*ADD: garlic and cook for 1 min.
*ADD: the whole container of chicken stock, apple cider vinegar, red pepper flakes, sugar, chicken soup base, cajun seasoning, black pepper, onion powder, garlic powder, Hot Sauce, SMOKED neck-bones, CURE ham hock (optional)to the pot. Mix everything well together, place a lid on the pot and cook for 1 hour.
*REMOVE: meat from the pot and pull meat from the bone, set aside.
*ADD: collard greens to the pot, along with the pulled meat. Place the lid on the pot and cook for 1 hour and 30 minutes. Add more broth or water to the pot IF NEEDED.
SERVE: with your favorite proteins and sides...ENJOY

SOUTHERN-STYLE BEEF TIPS & RICE
Servings: 4-6
Prep
Time: 15 minutes
Cook Time: 1.5 to 2 hours (or faster in pressure cooker)
Ingredients:
2 lbs beef stew meat or sirloin tips, cut into chunks
2 tbsp vegetable oil or bacon grease
1 medium onion, diced
1 green bell pepper, diced (optional)
3 cloves garlic, minced
2 cups beef broth (or more as needed) 1 tbsp Worcestershire sauce
1 tbsp soy sauce
1 tsp onion powder
1 tsp garlic powder
½ tsp smoked paprika
Salt and black pepper to taste
1 pack KINDER'S Stew Recipe Mix
2 tbsp all-purpose flour (for thickening)
Cooked
white rice or rice of choice
Fresh parsley or green onions for garnish (optional)
Instructions:
1. Season & Sear the Beef:
Season beef with salt, pepper, garlic powder, onion powder, and paprika. Heat oil in a heavy-bottomed pot or Dutch oven over medium-high heat. Brown beef in batches (don’t overcrowd), about 4-5 minutes per batch. Remove and set aside.
2. Sauté Veggies:
In the same pot, add diced onions and bell peppers (if using). Sauté until softened, about 3-4 minutes. Add minced garlic and cook for another minute.
3. Deglaze & Simmer:
Return beef to the pot. Stir in Worcestershire sauce, soy sauce, and beef broth—just enough to cover the meat. Bring to a boil, reduce to a low simmer, cover, and cook for 1.5 to 2 hours until beef is tender. Stir occasionally and add more broth if needed.
4. Thicken Gravy:
Mix flour with a little cold water to make a slurry. Slowly stir into the beef mixture. Cook for another 5-10 minutes until the gravy thickens. Taste and adjust seasoning.
5. Serve:
Spoon beef tips and gravy over hot cooked rice. Garnish with chopped parsley or green onions if desired.
