Ray Mack, was born in Durham North Carolina and stills reside in Durham North Carolina. He has been married to a wonderful woman for 22 years. He is a father of six and also has four beautiful granddaughters and another grandchild on the way. Ray Mack says his mother is a cooking woman and he learned some techniques from her. Southern Style Corn Pudding / Corn Pudding Recipe / Soul-Food
Homemade Southern Style Corn Pudding
Southern Style Corn Pudding
Ingredients:
24 oz frozen super sweet corn
1 stick unsalted butter
2 Tbsp all-purpose flour
1/2 cup granulated sugar
1 5 oz can evaporated milk
2-3 Tbsp maple syrup
1 1/2 tsp baking powder
1 or 2 tsp salt
1 or 2 tsp ground nutmeg
2 large eggs beaten
1-2 tsp vanilla flavoring
Directions:
1. Preheat the oven to 350°F.
2. Drain the corn well.
3. In a small saucepan over medium-high, melt 1/2 cup of butter. Add one tablespoon of all-purpose flour
and 1/2 cup of sugar to the melted butter.
4. Stir and continue to cook until the sugar is completely dissolved and the flour is incorporated. Remove
from the heat.
5. Add the evaporated milk, Maple syrup, baking powder, salt, nutmeg and two beaten eggs. Cook over medium heat until the custard is thick and smooth. Now add your vanilla flavoring and mix well.
6. Pour the custard over the corn. Mix well.
7. Spray or butter a 9 x 9 inch baking dish with cooking spray. Pour into the prepared baking dish. sprinkling nutmeg over your corn, if you like.
8. Bake for 40-45 minutes or until golden and the center is set.
9. Serve immediately.
