Ray Mack, was born in Durham North Carolina and stills reside in Durham North Carolina. He has been married to a wonderful woman for 22 years. He is a father of six and also has four beautiful granddaughters and another grandchild on the way. Ray Mack says his mother is a cooking woman and he learned some techniques from her. He also states that all of his Aunties can burn in the kitchen. He learned from the best.

Blackened Skillet Pork Chops

*Pork Chop (thin or thick cuts)
*1 large onion
*olive oil
*onion salt
*black pepper
*garlic powder
*spicy seasoning
*paprika
*ground cumin
*oregano leaves (dried)
*oregano, basil, & tomato spice blend (you can find this seasoning @ Ross retail stores)
1.Combine all of your spice ingredients in a small bowl. Season both sides of the pork chops with your blackened seasoning.
2. Add olive oil to a cast iron skillet, Heat your skillet on medium high heat. Add your onions to the skillet and cook them until they are browned but not fully cooked, remove them from the skillet and set them to the side.
3. Add more olive oil to the skillet and brown your pork chops on both sides. Try not to move your pork chop once you place them in the skillet, once all of your pork chops are done, add 1 layer of onions to your pork chops, repeat the process ending with the onions.
4. Preheat your oven to 365゚ and cook your pork chops for 15 to 20 minutes in the oven until they are done.
Serve this recipe up with your favorite side items… green peas and rice goes well with this dish. Please give this recipe a try.
