Cheesy Chicken Eggrolls

Egg roll wraps
Garlic powder
Black pepper 
salt
Fiesta blend shredded cheese
Green bell pepper
Onion
2 chicken breasts thinly sliced
Butter
Egg
Vegetable shortening

1. Sautéed onion and green peppers using butter. Add salt and pepper,  do not 
fully cook onion and pepper mixture. Cook for about five minutes.
2. Add chicken slices to onion and pepper mixture and start cooking. Cook the 
chicken unto it is well done.
3. Now pour the cook chicken along with the mix onions and peppers into a 
strainer. Discard all of the juice and place the chicken mixture in the 
refrigerator for 25 minutes.
4. Now take mixture out of refrigerator and top with cheese.
5. Now take the egg and beat it in a bowl.
6. Take your egg-roll wraps and place them on a table, now take the beaten egg 
and dip your finger into it coating the four sides of the egg-roll.
7. Now add chicken mixture in middle of the egg-roll, roll it up with a tight 
seal.
8. Now fry your egg-rolls in the vegetable shortening. Serve with your favorite 
sauce.

Homemade Banana Bread

Recipe for banana bread
Serves 8

 4 ripe bananas
2 eggs, lightly beaten
1 ½ c flour
1 c sugar
½ c butter, room temperature
1 ½ t vanilla extract
1 1/8 t baking soda
½ t salt

Prepare a loaf pan by coating the inside with butter, you can use the wrapper or just a little butter and paper towel.

Add 1 Tablespoon of flour to the inside of the loaf pan and move the pan around and tapping it with your hands.

 Once the pan is covered dump out the excess flour. Set aside. Preheat oven to 350 degrees. Add sugar and butter to the bowl of a stand mixer or, just use a handheld electric mixer.

ream the butter and sugar until it's light and fluffy and changes to pale color. Add eggs and mix well, stop the mixer and add the vanilla extract and banana mash, mix until well combined, stop the mixer and add all of the flour and other dry items mix just until the flour is incorporated. Jalapeno Corn Hush Puppies

2 (8 1/2 ounce) boxes Jiffy corn muffin mix
1/4-1/2 cup onion, chopped as fine as you like them
3/4 cup milk
3/4 cup creamed corn
1 jalapeno pepper, chopped (optional)
oil, for frying

Directions:

1 Heat oil to 375 degrees F in deep fat fryer.
2 Mix all together.
3 Drop by tablespoonfuls in hot oil. Fry until golden brown.
