Southern-Style String Beans and Potatoes | How To Cook Green Beans





Southern Style String Beans and Potatoes


Ingredients:
•1 or 2 lbs. fresh string beans 
•6 or 7 white potatoes 
•sliced country cured ham trimmings
•sliced bacon ends and pieces
•1 large onion (sliced)
•1 tablespoon unsalted butter
•Water
•1 tablespoon sugar
•2 tablespoons Knorr's chicken flavoring
•1 tsp. cayenne pepper
•1 tsp. garlic powder 
•1 tsp. or more black pepper 
•1/2 tablespoon oregano, basil, tomato spice blend (Ross Department store)

Directions:
1. Wash and clean your string beans and potatoes. Remove the tips only from your beans. Cut your potatoes into 1/4 wedges.
2. Using a large pot, add your butter, ham trimmings, bacon pieces, and onion to the pot. Set your stove to Med-High heat. Allow it to cook for 4-5 minutes. 
3. Add about 2 cup of water to your pot, rub the bottom of the pot to mix in the flavors. 
4. Add the sugar and the rest of your seasonings to the pot, along with the washed and cleaned string beans, mix everything together. Add water just barely covering the top of the string beans, cover with a lid..allow to cook for 35 to 40 mins.
5. After 35 to 40 mins. of cooking add more water if needed, add potatoes, once your potatoes are tender...THE DISH IS DONE.

Serve this up with your favorite meal...chicken, fish, pork, turkey. You can eat this by itself with some fried hot water cornbread and have a great meal.

Old Fashioned Chicken and Dumplings



Ingredients:

•6 Boneless Chicken Thighs

•2 Celery stalks (sliced)

•2 Carrots (sliced)

1 Onion (sliced)

•Garlic and Herb Seasoning (Spain's Spices)

•Onion Powder

•Garlic Powder

•Black Pepper

•Chicken Seasoning

•All N One Seasoning (Spain's Spices, you can use all purpose seasoning as well)

•Cajun Seasoning

•Parsley Flakes

•Italian Seasoning



Dumplings:

•2 1/2 cups all purpose flour

•1 teaspoon salt (add to your flour)

•Water (add small amounts at a time to make the dough stiff)



Directions:

1.Watch a d place chicken thighs is a stock pot and cover with water just enough the cover chicken.

2. Add all seasoning ingredients and butter. Bring to a boil, cover with lid and cook for 45 mins or 1 hr. Until chicken is tender.

Dumplings:

3.Place on a floured surface and knead together, when the dough is stiff its ready to roll out with a floured rolling pin...roll it out very thin. Cut into strips and let it dry for a few minutes. If flour is lifted on your dumpling, it will be fine.

4. Now, break your chicken apart and stir the broth, slowly drop your dumpling into the chicken broth. They will stiffen up as they cook. You may not need all of your dumpling, so please don't over crowd the pot with dumpling...now at this time allow your dumpling to boil and cook.

5. Bring your temperature down to medium low heat, place the lid on the pot. You will know when your dumpling are done because they will become trick.
