How To Make Southern-Style Collard Greens Like Grandma

Learn how to make tender and flavorful collard greens with a smoked ham hock, vinegar, and other simple ingredients. First, answer these questions: 1. How do you make collard greens? 2. How do you season your collard greens? 3. What do you eat with your collard greens? 4. How much sugar do you put in your collard greens? How To Make Southern-Style Collard Greens 2 bundles of collard greens (Washed and stems removed) 1 yellow onion cut into thin slices 1 tablespoon olive oil 1 tablespoon of jar minced garlic 1 container of chicken stock 1/2 cup apple cider vinegar 1 tsp red pepper flakes 1 to 2 tablespoon sugar 1 tablespoon of chicken soup base cajun seasoning black pepper onion powder garlic powder Hot Sauce 4 pieces of SMO KED neck-bones 1 CURE ham hock (optional) *Place a LARGE pot on stove top, set to MED-HIGH heat. ADD: olive oil, onions cook until they turn brown. *ADD: garlic and cook for 1 min. *ADD: the whole container of chicken stock, apple cider vinegar, red pepper flakes, sugar, chicken soup base, cajun seasoning, black pepper, onion powder, garlic powder, Hot Sauce, SMOKED neck-bones, CURE ham hock (optional)to the pot. Mix everything well together, place a lid on the pot and cook for 1 hour. *REMOVE: meat from the pot and pull meat from the bone, set aside. *ADD: collard greens to the pot, along with the pulled meat. Place the lid on the pot and cook for 1 hour and 30 minutes. Add more broth or water to the pot IF NEEDED. How To Cook Southern Style Bacon & Onion Cabbage


The BEST Southern Fried Cabbage with Sausage Recipe EVER!!! Ingredients: 1 whole cabbage 7 strips of smoked Bacon 1/2 large sweet onion, sliced 1/2 cup chicken broth (I said beef broth in the video...mistake) Ray Mack's Soul-food Seasoning 1 teaspoon salt 1 teaspoon black pepper 1 teaspoon garlic powder 1 teaspoon onion powder 1 tablespoon sugar 1 teaspoon red pepper flakes Directions: 1. Clean your cabbage. Cut into thin slices or chunks. Slice bacon into bite size pieces. 2. Heat a cast iron pot or skillet over med-high heat, add a small amount of oil to the skillet if needed...cook bacon and onions until crispy. 3. Add: cabbage to the pot or skillet, add seasonings listed above, along with chicken broth...mix well. Cook for 10 mins. Steak Bite Loaded Baked Potatoes with Alfredo Sauce Ingredients: BAKING POTATOES: 2 Large Baking Potatoes Olive oil Kosher salt Clean your Potatoes well, Rub a generous amount of Olive oil on your potatoes and heavily seasoned with kosher salt. (You do not have to poke holes or make slits in your potatoes) Set your oven temperature to 400° and allow your potatoes to cook for 1 hour and 15 minutes or until TENDER. STEAK BITES: Beef Chuck Steak, cut into Bite-size pieces Blackening Season Jarlic Jalapeño Seasoning (Weber's) Garlic Powder Onion Powder Black Pepper Olive Oil 1-2 tablespoon, minced Garlic 1/2 Onion, cut into slices Add everything to the beef steak bites pieces and mix well. Alfredo Sauce: 1 cup Whipping Cream 2 tablespoons, Unsalted Butter Garlic Powder Onion Powder Black Pepper 1 teaspoon Salt 1 teaspoon Cajun Seasoning Plenty Parmesan Cheese Green Parsley Brown your streak bites mixture using a cast iron or non-stick skillet over med-high heat. Add all of the ALFREDO SAUCE INGREDIENTS, except for the parmesan cheese and green parsley. COOK: until the sauce thickens and reduce slightly. ADD: parmesan cheese and green parsley mix, taste for Seasoning. BUILT THE BAKED POTATOES: Open you potatoes, fluff potatoes using a fork...add unsalted butter, black pepper. TOP: with the steak bite filling with the ALFREDO SAUCE..."LOAD THAT BABY UP"...TOP: with parmesan cheese and Sprinkle: Green Parsley for color. SERVE THESE BABY UP AND ENJOY. Southern Style Candied Yams | Candied Yam Recipe | Ray Mack's Kitchen an...


Southern Candied Yams

Candied yams is a old fashioned side dish that's cooked in a candied mixture on the stove-top with spices, sugar and butter. This recipe is easy and simple the prepare. 

Ingredients
2lb sweet potatoes
3/4 cup dark brown sugar or light brown sugar
2 tsp cinnamon
1 tsp nutmeg
1/4 tsp salt
2 tsp vanilla extract
1 stick butter
1 1/2 cups Apple Cider

Instructions

1. Peel and slice your yams into ½ inch rounds. In a medium pot over medium high heat, ADD: apple cider & sweet potatoes, allow to cook for 10-15 mins. ADD: the rest of the ingredients. Stir the sweet potatoes.

2. Let it come to a boil. Cover, then simmer for about 45 minutes or until the yams are nice and tender when slightly pierced with a fork. If the yam is still a bit hard. Let it cook a little longer. 

3. Remove the lid from the skillet, then set stove to medium. Stirring occasionally until the cooking liquid reduces about 10 minute or until the syrup coats the yams. These taste best warm.

Add your grits, water, salt and pepper to a large sauce pan, let your Grits come to a boil, reduce your to low heat, cook for 20 to 25 minutes steering constantly. Shrimp Recipe: Ingredients: •1 lb. Med. Shrimp (20-30 count) •Olive oil •Smoked andouille sausage (pork or beef) •1 green bell pepper (sliced) •1 large onion (sliced) •2 stalks of celery (sliced) •Blackening seasoning •Weber Garlic Jalapeno seasoning •1 LG. Container chicken broth •roasted garlic & red bell pepper seasoning (you can find this @ Ross Department store) •garlic & onion seasoning (you can find this @ Ross Department store) •onion powder •Garlic (Jar is fine) •1 teaspoon Cajun seasoning •Diced jalapeno peppers •Black pepper •Knorr's chicken flavoring •3 tablespoons cooked ROUX •2 tablespoons unsalted butter •CHOPPED FRESH PARSLEY Direction: 1. Heat your cast iron deep pot to high heat, add olive oil, smoke sausages. Your sausages are ready when browned...remove from the skillet, set aside. 2. Add your onions, green bell peppers, celery to your pot, cook for 7-8 minutes and remove from the pot. 3. Add more olive oil to the pot, add shrimp, turn the heat down to LOW, SEASONING your shrimp with Blackened Seasoning, garlic Jalapeno seasoning cook for 1 minute...if it's still raw that FINE, Remove from the pot. 4. ADD 1/2 Container chicken broth to the pot, along with the THE OTHER SEASONING LISTED ABOVE. mix everything WELL. 5. Add sausages, veggies to the pot with the rest of the chicken broth, add unsalted butter. Bring your pot to a boil to reduce the liquid by half. How Do you Make Alfredo Sauce From Scratch | Pasta Sauce




Easy Alfredo Sauce Recipe

Ingredients: 
Salt (add to taste)
Black pepper (add to taste)
3/4 cup Grated parmesan cheese
1/2 cup Heavy whipping cream
1 stick unsalted butter 
Chopped fresh Parsley 
Pasta noodle (whatever noodles you like)

Directions:
0:00 - Ingredients 
0:12 -  Prepare noodles according to directions on the back of the package. Add oil, salt to your water to keep your pasta from sticking.
0:27 -  Heat the unsalted butter and whipping cream in a skillet over low heat, always stirring constantly until the butter is melted. 
2:05 - add your salt and pepper, stir in your cheese, until the sauce is smooth.
4:38 - add your chopped Parsley...
Drain your pasta, pour the sauce over your hot pasta, stir until the pasta is well coated with the sauce. Sprinkle with more Parsley and seasoning to taste.

These recipe can go well with any pasta dish... Please experient with this Alfredo sauce recipe, Music on baked potatoes, meat dishes, seafood recipes...you'll love it.

How To Make Southern Style Hash Browns | DIY Hash Brown Recipe TUTORIAL





Southern-Style Homemade Hash browns | Ray Mack's Kitchen and Grill



Ingredients:

•5 white potatoes 🥔

•1 med. onion 🌰

•All in One Seasoning (Spain's Spices) or use your favorite all purpose seasoning

•Black pepper

•Italian Seasoning

• 2 tablespoon butter (1 for each side)

•Parsley for garnish



Directions:

1. Clean and skin your potatoes.

2.  Shred your potatoes using a cheese shredded.

3. Dice your onion.

4. Add your potatoes and onion to a bowl, along with all your seasoning and mix well.

5. Heat a cast iron skillet 🍳 on the stove, add 1 tablespoon butter 🧈. Add your potato mixture to the hot skillet. Flatten your potatoes to the skillet using a spatula this will help form a crush.

6. Once the bottom forms a crush, flip your potatoes onto a clean plate, add 1 tablespoon butter to the skillet and add the potatoes back as well.

7. Cook your hash browns until it become CRISPY. DIVIDE it up into portions and ENJOY.



COOKING TIP:  After you shred your potatoes using the cheese shredder,  Place your raw potatoes onto paper towel sheets and squeeze until all of the water moisture is squeezed out. This will definitely give you a crispier hash brown.

Southern-Style String Beans and Potatoes | How To Cook Green Beans





Southern Style String Beans and Potatoes


Ingredients:
•1 or 2 lbs. fresh string beans 
•6 or 7 white potatoes 
•sliced country cured ham trimmings
•sliced bacon ends and pieces
•1 large onion (sliced)
•1 tablespoon unsalted butter
•Water
•1 tablespoon sugar
•2 tablespoons Knorr's chicken flavoring
•1 tsp. cayenne pepper
•1 tsp. garlic powder 
•1 tsp. or more black pepper 
•1/2 tablespoon oregano, basil, tomato spice blend (Ross Department store)

Directions:
1. Wash and clean your string beans and potatoes. Remove the tips only from your beans. Cut your potatoes into 1/4 wedges.
2. Using a large pot, add your butter, ham trimmings, bacon pieces, and onion to the pot. Set your stove to Med-High heat. Allow it to cook for 4-5 minutes. 
3. Add about 2 cup of water to your pot, rub the bottom of the pot to mix in the flavors. 
4. Add the sugar and the rest of your seasonings to the pot, along with the washed and cleaned string beans, mix everything together. Add water just barely covering the top of the string beans, cover with a lid..allow to cook for 35 to 40 mins.
5. After 35 to 40 mins. of cooking add more water if needed, add potatoes, once your potatoes are tender...THE DISH IS DONE.

Serve this up with your favorite meal...chicken, fish, pork, turkey. You can eat this by itself with some fried hot water cornbread and have a great meal.

Easy Southern Style Skillet Sauteed Potatoes


Ingredients:
4 Idaho potatoes
1 Large sliced onion
Unsalted butter
1 tablespoon minced garlic
Black pepper
Paprika 
Thyme
Parsley flakes
Salt
2 tablespoon water

Directions:
1. Wash, peel, and cut your potatoes in quarters. You can soak them in water to keep them from turning brown.
2. Cook your potatoes in a cast iron skillet, set the stove temperature to Med-High heat. Add 4 tablespoon of butter to the hot skillet, add the potatoes and onions.
3. Add all of your ingredients, please use your own judgment for measuring the seasonings. Mix everything together, place a lid or heavy-duty aluminum foil on top of the skillet. 
4. Let it cook for 10-15 mins, flip your potatoes from time to time.
You can adjust the heat if it's to high.
5. Now, remove the lid covering... add 2 tablespoon of water. Your potatoes are done when they become FORK TENDER.

This side dish reminds me of home, It was delicious then and it's still delicious now. How many of you here used to eat canned corn and peas mixed together? I'm not ashamed to cook with canned goods...ARE YOU?

How To Cook Canned Corn & Peas | Side Dish

Ingredients:
2 cans whole kernel corn
2 cans sweet peas
Ground black pepper
Parsley flakes
Italian seasoning
Cajun seasoning
2 tablespoons Minced garlic
1/2 stick unsalted butter
(please measure your own amount of seasoning to this side dish.)

1. Open safely canned corn and sweet peas, drain juice from 3 cans except 1 canned corn.
2. Place your skillet on the stovetop, Set your stove temp. to med/high heat.
3. Add canned corn and sweet peas to the skillet.
4. Add butter, and all of the ingredients above.
5. Cook until the juice reduce down, steering occasionally.

Serve this up with your favorite meal, you will love it.

Ray Mack's Smoke Sausage Stew


Ingredients:
1 pack of Rogerwood Pork or Beef sausage (sliced)
6 ears whole corn on the cob (cut in half)
1 pound or more fresh string beans
8 or more large new white potatoes
2 large onions, sliced
3 tablespoon minced garlic
1 tablespoon parsley flakes
2 tablespoons lemon pepper
2 tablespoons Tones sweet and spicy seasoning
1/2 tablespoon cajun seasoning
1/2 tablespoon black pepper
2 tablespoons Knorr chicken flavor bouillon
2 tablespoon seafood boil seasoning
1 stick unsalted butter

Direction:
1. Wash and clean all of the veggies. Using a large stock or stew pot, place all ingredients in the pot. (Use your own judgment for measuring out the seasoning for this recipe, if you believe the measurements are to much listed above.)
2. Add water to the pot, do not fully cover the ingredients with water.
3. Turn your stove temperature to high heat, once your pot comes to a boil cover with a lid.
4. Cook for 15 minutes and check your potatoes for tenderness, When your potatoes are tender remove them only from the pot.
5. Reduce your pot temperature to medium high heat, Allow your water to reduce down by half.
6. Taste the broth to see if more seasonings are needed. Place your potatoes back in the pot and turn off your stove.

Old School Yellow Squash & Onions | Soul Food Side Dish



3 yellow squash

1 large onion

Cajun Seasoning

Black Pepper

Paprika

Garlic Powder

Parsley Flakes

Knorr Chicken Flavor Bouillon

3 Tablespoons Unsalted Butter

1/2 tablespoon sugar (optional)



1. Wash and clean your squash and cut them into medallions shapes, And cut your onion in slices.

2.  Place a iron skillet on the stove and set the temperature at medium to high heat.  Use 4 tbsp of your favorite seasoned grease...I used chicken grease for this recipe.

3. Add your yellow squash and I onions to the hot skillet.

4.  Now add all of your seasoning ingredients to the squash and onions. Mix everything together.

5. Now add your 3 tablespoons of butter,  Cook your squash and onion's until they are tender...Also allow your liquid to reduce down before serving.

6. Add a 1/2 of tablespoon of sugar to add more flavor this is totally optional.

How To Make Fried Cabbage / Ray Mack's Kitchen and Grill





How To Cook Fried Cabbage

 
4 strips of bacon
2 smoke sausage links
1/2 cabbage
1/2 onion 
1/2 red bell pepper
1/2 green bell pepper
1 tablespoon minced garlic
1 teaspoon Louisiana Cajun seasoning
1 teaspoon creole seasoning 
1 teaspoon black pepper

1. Wash and clean your vegetables,
cut your cabbage into thick slices...cut your onions, red and green peppers into slices.
2. Cut your bacon into small slices, Cut your smoke sausages into bite size pieces or cut them into quarter sizes. Cook your bacon and smoked sausages together using a cast iron skillet, until the smoke sausages are brown and the bacon is crispy. Take your meat out of your skillet and leave in the grease drippings.
3. Add your onions and bell peppers to the skillet with the dripping...Cook them until they are tender and translucent. 
4. Now add your garlic along with your spice seasonings to the pepper and onion mixture, mix everything will.
5. Add your cabbage in small batches...If you using a larger pot, add all at 1 time. Now place a cover on top and let your cabbage cook down for at least 5 minutes. 
6. Now add your smoke sausage and bacon to the cabbage mixture and let it cook down until your cabbage is tender. Do not add water.

This recipe is good for 2-3 people, DOUBLE the recipe to feed more than 3 people.

Mack Pack Oven Candied Yams / How Do You Fix Homemade Candied Yams





RECIPE
Oven Candied Yams 

Ingredients

4-6 Large sweet Potatoes 
White sugar
Ground cinnamon 
Ground nutmeg 
Ground allspice
Salt
Brown sugar
Molasses
Vallilla extract
1 stick butter (unsalted
Water

Preparation



Wash and clean your potatoes, slice them thick cuts.
Using a deep baking pan, add your potatoes along with all of the ingredients. We DON'T have measurements for the ingredients.
Cover your potatoes with heavy duty foil, set your oven @ 375゚
Cook the potatoes for 45 mins.
Remove the foil and cook the yams Until the liquid evaporates, but continue basing your potato with the liquid doing the cooking process.
Your candied yams should have a mahogany color and very sweet to the taste...

This recipe pairs will with fried chicken, homemade macaroni and cheese, good old fashioned collard greens, buttery corn on the cob, and some homemade warm cornbread.

Homemade Southern Style Corn Pudding



Southern Style Corn Pudding

Ingredients:

24 oz frozen super sweet corn

1 stick unsalted butter

2 Tbsp all-purpose flour

1/2 cup granulated sugar

1 5 oz can evaporated milk

2-3 Tbsp maple syrup

1 1/2 tsp baking powder

1 or 2 tsp salt

1 or 2 tsp ground nutmeg

2 large eggs beaten

1-2 tsp vanilla flavoring



Directions:

1. Preheat the oven to 350°F.

2. Drain the corn well.

3. In a small saucepan over medium-high, melt 1/2 cup of butter. Add one tablespoon of all-purpose flour

and 1/2 cup of sugar to the melted butter.

4. Stir and continue to cook until the sugar is completely dissolved and the flour is incorporated. Remove

from the heat.

5. Add the evaporated milk, Maple syrup, baking powder, salt, nutmeg and two beaten eggs. Cook over medium heat until the custard is thick and smooth. Now add your vanilla flavoring and mix well.

6. Pour the custard over the corn. Mix well.

7. Spray or butter a 9 x 9 inch baking dish with cooking spray. Pour into the prepared baking dish. sprinkling nutmeg over your corn, if you like.

8. Bake for 40-45 minutes or until golden and the center is set.

9. Serve immediately.
