Flavored with smoky pork neck bones, sweet onion, and plenty of garlic, this Southern collard greens recipe is a classic, easy side dish! Learn how to make tender and flavorful collard greens with a smoked ham hock, vinegar, and other simple ingredients.

How To Make Southern-Style Collard Greens
2 bundles of collard greens (Washed and stems removed)
1 yellow onion cut into thin slices
1 tablespoon olive oil
1 tablespoon of jar minced garlic
1 container of chicken stock
1/2 cup apple cider vinegar
1 tsp red pepper flakes
1 to 2 tablespoon sugar
1 tablespoon of chicken soup base
cajun seasoning
black pepper
onion powder
garlic powder
Hot Sauce
4 pieces of SMO KED neck-bones
1 CURE ham hock (optional)
*Place a LARGE pot on stove top, set to MED-HIGH heat. ADD: olive oil, onions cook until they turn brown.
*ADD: garlic and cook for 1 min.
*ADD: the whole container of chicken stock, apple cider vinegar, red pepper flakes, sugar, chicken soup base, cajun seasoning, black pepper, onion powder, garlic powder, Hot Sauce, SMOKED neck-bones, CURE ham hock (optional)to the pot. Mix everything well together, place a lid on the pot and cook for 1 hour.
*REMOVE: meat from the pot and pull meat from the bone, set aside.
*ADD: collard greens to the pot, along with the pulled meat. Place the lid on the pot and cook for 1 hour and 30 minutes. Add more broth or water to the pot IF NEEDED.

Spicy Asparagus Spears | Ray Mack's Asparagus Spice Seasoning

SPICY ASPARAGUS SPEARS
1 1/2 lbs. fresh asparagus, trimmed
1 to 3 tbsp. extra-virgin olive oil
1/2 tsp. salt
1/2 tsp. garlic powder
1/2 tsp. spicy seasoning
1/2 black pepper
1/2 tbls. rosemary & garlic seasoning
1 to 2 tbsp. unsalted butter
1. Snap off the woody fiber ends at the bottom of the spears. Wash the asparagus thoroughly in cold running water.
2. Heat skillet over med-high heat, add butter and olive oil. When the butter is melted, add asparagus and seasoning mix.
3. Cook until the asparagus is tender, SERVE HOT.
