How To Make Southern-Style Collard Greens Like Grandma


Did you make my Classic Southern Collard Greens? Flavored with smoky pork neck bones, sweet onion, and plenty of garlic, this Southern collard greens recipe is a classic, easy side dish! Learn how to make tender and flavorful collard greens with a smoked ham hock, vinegar, and other simple ingredients. First, answer these questions: 1. How do you make collard greens? 2. How do you season your collard greens? 3. What do you eat with your collard greens? 4. How much sugar do you put in your collard greens? How To Make Southern-Style Collard Greens 2 bundles of collard greens (Washed and stems removed) 1 yellow onion cut into thin slices 1 tablespoon olive oil 1 tablespoon of jar minced garlic 1 container of chicken stock 1/2 cup apple cider vinegar 1 tsp red pepper flakes 1 to 2 tablespoon sugar 1 tablespoon of chicken soup base cajun seasoning black pepper onion powder garlic powder Hot Sauce 4 pieces of SMO KED neck-bones 1 CURE ham hock (optional) *Place a LARGE pot on stove top, set to MED-HIGH heat. ADD: olive oil, onions cook until they turn brown. *ADD: garlic and cook for 1 min. *ADD: the whole container of chicken stock, apple cider vinegar, red pepper flakes, sugar, chicken soup base, cajun seasoning, black pepper, onion powder, garlic powder, Hot Sauce, SMOKED neck-bones, CURE ham hock (optional)to the pot. Mix everything well together, place a lid on the pot and cook for 1 hour. *REMOVE: meat from the pot and pull meat from the bone, set aside. *ADD: collard greens to the pot, along with the pulled meat. Place the lid on the pot and cook for 1 hour and 30 minutes. Add more broth or water to the pot IF NEEDED. How To Cook Southern Style Bacon & Onion Cabbage


The BEST Southern Fried Cabbage with Sausage Recipe EVER!!! Ingredients: 1 whole cabbage 7 strips of smoked Bacon 1/2 large sweet onion, sliced 1/2 cup chicken broth (I said beef broth in the video...mistake) Ray Mack's Soul-food Seasoning 1 teaspoon salt 1 teaspoon black pepper 1 teaspoon garlic powder 1 teaspoon onion powder 1 tablespoon sugar 1 teaspoon red pepper flakes Directions: 1. Clean your cabbage. Cut into thin slices or chunks. Slice bacon into bite size pieces. 2. Heat a cast iron pot or skillet over med-high heat, add a small amount of oil to the skillet if needed...cook bacon and onions until crispy. 3. Add: cabbage to the pot or skillet, add seasonings listed above, along with chicken broth...mix well. Cook for 10 mins. Please stir the cabbage when cooking constantly so it wont burn from the bottom. 4. when cabbage is tender. SERVE WHILE HOT AND ENJOY. Wash, clean & pat dry pork chops, Add: seasoning, and a few drops of olive oil front and back of each pork chops. (Rub Seasoning into the meat) 2. Heat a cast iron skillet on the stove top using med high heat. Add olive oil to the skillet, brown pork chops and onions together. Remove onions when brown, Continue cooking the pork chops, Cover with a lid. 3. Remove pork CHOPS from the skillet when done, set aside. 4. Let make the SAUCE: using a small skillet, ADD: butter, and all other ingredients listed for the BLACK PEPPER SAUCE. 5. COOK over med-high heat, Stir constantly until the sauce thickens. 6. Serve this sauce over your pork chops and serve with the onions and your favorite side dish. Container chicken broth •roasted garlic & red bell pepper seasoning (you can find this @ Ross Department store) •garlic & onion seasoning (you can find this @ Ross Department store) •onion powder •Garlic (Jar is fine) •1 teaspoon Cajun seasoning •Diced jalapeno peppers •Black pepper •Knorr's chicken flavoring •3 tablespoons cooked ROUX •2 tablespoons unsalted butter •CHOPPED FRESH PARSLEY Direction: 1. Heat your cast iron deep pot to high heat, add olive oil, smoke sausages. Your sausages are ready when browned...remove from the skillet, set aside. 2. Southern Deep Fried Pork Chops | Collab w/t Mama Ray Ray Kitchen





Southern Deep Fried Pork Chops


Ingredients: 
•4 bone-in Pork Chops
•2 eggs
•Knorr Chicken Flavor Bouillon
•Complete Seasoning
•Spain's Spices All n One Seasoning 
•Black Pepper
•Onion Powder 
•Garlic Powder
•Oregano, Basil, & Tomato Seasoning (you can find this @ ROSS DEPARTMENT STORES)
•Parsley Flakes
•Plain all purpose flour
•Vegetable oil for frying chicken

Directions:
1. Wash and clean your pork chops, this will help remove any bone fragments.
2. Using a LARGE bowl with a seal tight lid...add all of your ingredients except for the pork chops.  You be the judge of how much seasoning you would like to add to this mixture. Mix everything well, now add your pork chops to the mixture.
Cover your pork chops with a lid and let them sit at Room temperature to 35 minutes before cooking.
3. Coat your pork chops using plain flour or store bought seasoned chicken breading mix...(DON'T ADD SALT IF USING STORE BOUGHT MIX) 
4. Heat oil using a skillet or deep fryer, oil is ready when the temperature reached 350゚. 
5. Fry your pork chops until they are done and ready to serve.  Some people like them fried hard and some don't. 

You could make you an awesome fried pork chop sandwich or serve this with whatever side items you choose. Please try this recipe and I guarantee you, You will love it.

Smoke Sausage stew | Smoke Sausage Recipe




Ray Mack's Smoke Sausage Stew


Ingredients:
1 pack of Rogerwood Pork or Beef sausage (sliced)
6 ears whole corn on the cob (cut in half)
1 pound or more fresh string beans
8 or more large new white potatoes
2 large onions, sliced
3 tablespoon minced garlic
1 tablespoon parsley flakes
2 tablespoons lemon pepper
2 tablespoons Tones sweet and spicy seasoning
1/2 tablespoon cajun seasoning
1/2 tablespoon black pepper
2 tablespoons Knorr chicken flavor bouillon
2 tablespoon seafood boil seasoning
1 stick unsalted butter

Direction:
1. Wash and clean all of the veggies. Using a large stock or stew pot, place all ingredients in the pot. (Use your own judgment for measuring out the seasoning for this recipe, if you believe the measurements are to much listed above.)
2. Add water to the pot, do not fully cover the ingredients with water.
3. Turn your stove temperature to high heat, once your pot comes to a boil cover with a lid.
4. Cook for 15 minutes and check your potatoes for tenderness, When your potatoes are tender remove them only from the pot.
5. Reduce your pot temperature to medium high heat, Allow your water to reduce down by half.
6. Taste the broth to see if more seasonings are needed. Place your potatoes back in the pot and turn off your stove.

How To Make Fried Cabbage / Ray Mack's Kitchen and Grill





How To Cook Fried Cabbage

 
4 strips of bacon
2 smoke sausage links
1/2 cabbage
1/2 onion 
1/2 red bell pepper
1/2 green bell pepper
1 tablespoon minced garlic
1 teaspoon Louisiana Cajun seasoning
1 teaspoon creole seasoning 
1 teaspoon black pepper

1. Wash and clean your vegetables,
cut your cabbage into thick slices...cut your onions, red and green peppers into slices.
2. Cut your bacon into small slices, Cut your smoke sausages into bite size pieces or cut them into quarter sizes. Cook your bacon and smoked sausages together using a cast iron skillet, until the smoke sausages are brown and the bacon is crispy. Take your meat out of your skillet and leave in the grease drippings.
3. Add your onions and bell peppers to the skillet with the dripping...Cook them until they are tender and translucent. 
4. Now add your garlic along with your spice seasonings to the pepper and onion mixture, mix everything will.
5. Add your cabbage in small batches...If you using a larger pot, add all at 1 time. Now place a cover on top and let your cabbage cook down for at least 5 minutes. 
6. Now add your smoke sausage and bacon to the cabbage mixture and let it cook down until your cabbage is tender. Do not add water.

Please enjoy this recipe...
This recipe is good for 2-3 people, DOUBLE the recipe to feed more than 3 people.

Blackened Skillet Pork Chops

*Pork Chop (thin or thick cuts)

*1 large onion

*olive oil

*onion salt

*black pepper

*garlic powder

*spicy seasoning

*paprika

*ground cumin

*oregano leaves (dried)

*oregano, basil, & tomato spice blend (you can find this seasoning @ Ross retail stores)



1.Combine all of your spice ingredients in a small bowl.  Season both sides of the pork chops with your blackened seasoning.



2.  Add olive oil to a cast iron skillet, Heat your skillet on medium high heat. Add your onions to the skillet and cook them until they are browned but not fully cooked,  remove them from the skillet and set them to the side.



3.  Add more olive oil to the skillet and brown your pork chops on both sides. Try not to move your pork chop once you place them in the skillet, once all of your pork chops are done,  add 1 layer of onions to your pork chops, repeat the process ending with the onions.



4.  Preheat your oven to  365゚ and cook your pork chops for 15 to 20 minutes in the oven until they are done.



Serve this recipe up with your favorite side items… green peas and rice goes well with this dish. Please give this recipe a try.

I used this sauce on BBQ Ribs, Chicken and Pork Chops...It is amazing. It's a down home South Carolina style sauce with a twist. Please give this recipe a try, I post a few links of me using this sauce below the recipe. I would LOVE to see your creation using this recipe adding your own twist.

Carolina Gold BBQ Sauce: BBQ Sauce Recipe

1 Bottle of George's BBQ Sauce (or your favorite Eastern Carolina Sauce)
1 small bottle French's Mustard
1 Large onion, sliced
Brown Sugar
