How To Cook Fried Cabbage

 
4 strips of bacon
2 smoke sausage links
1/2 cabbage
1/2 onion 
1/2 red bell pepper
1/2 green bell pepper
1 tablespoon minced garlic
1 teaspoon Louisiana Cajun seasoning
1 teaspoon creole seasoning 
1 teaspoon black pepper

1. Wash and clean your vegetables,
cut your cabbage into thick slices...cut your onions, red and green peppers into slices.
2. Cut your bacon into small slices, Cut your smoke sausages into bite size pieces or cut them into quarter sizes. Cook your bacon and smoked sausages together using a cast iron skillet, until the smoke sausages are brown and the bacon is crispy. Take your meat out of your skillet and leave in the grease drippings.
3. Add your onions and bell peppers to the skillet with the dripping...Cook them until they are tender and translucent. 
4. Now add your garlic along with your spice seasonings to the pepper and onion mixture, mix everything will.
5. Add your cabbage in small batches...If you using a larger pot, add all at 1 time. Now place a cover on top and let your cabbage cook down for at least 5 minutes. 
6. Now add your smoke sausage and bacon to the cabbage mixture and let it cook down until your cabbage is tender. Do not add water.

How To Bake Chicken Thighs / Ray Mack's Kitchen and Grill





How To Cook Baked Chicken Thighs


1 pack family chicken thighs 
Cajun seasoning 
Paprika 
Garlic Powder 
Onion Powder
Lemon Pepper Seasoning 
Black Pepper
Parchment paper

1. Wash and clean your chicken thighs, Set your oven to 425゚
2. Season your chicken with all of your seasonings above.
3. Line your baking sheet pan with a layer of parchment paper.  Place your chicken thighs on the parchment paper skin side down. Now season your chicken on the otherside... You can use as much seasoning as you like or less.
4.  Place your chicken in the oven and let it cook for 1 hour.  Once your chicken is done,  Check your internal temperature it should read a 165゚ using a meat thermometer.  If you don't have a meat thermometer,  Take a fork and poke the middle of the chicken thigh, If the juicy come out clear it's done... If you still have some blood running, put it back into the oven until it is fully cooked.
5.  Now flip your chicken thighs over and placed them under the broiler for 4 minutes this will help crisp up the skin... Please watch your chicken while under the broiler...it could burn if left  unattended.

Service this up with whatever side dishes you like and enjoy.
