Healthy Crock-Pot Meal: Mexican-Style Chicken Taco
2 pounds boneless skinless chicken breasts
15-16 ounces your favorite salsa
1 can of your FAVORITE beans
1 Jalapeno Pepper
1 Package of Taco Seasoning Mix
1 Pack of Mexican Cheese Blend
1 Package of soft taco wraps
Place chicken breasts on the bottom of the slow cooker. Pour salsa, taco seasoning, jalapeno pepper over top.
Cover and cook for 3-4 hours on high or 6-8 hours on low. Once cooked through, use 2 forks or meat claws to shred chicken. Season with salt and pepper to taste or add whatever seasoning you like to jazz it up with.. Mine usually needs just a pinch of salt. Now save 1 cup of the Seasoned juice and pour out the rest...Add can beans and a little of the seasoned juice as needed (((start with 1 TBLS)). reheat for 10-15 mins. Place meat mixture on soft taco wraps along with cheese. Place in the microwave oven for 15 second...
